Ingredients

For the Cookie Base:

  • 1 cup almond flour
  • 1 cup oat flour (certified gluten-free if needed)
  • 1/2 cup cranberries
  • 1/2 cup chocolate chips (dairy-free if desired)
  • 2 servings of Nourish Almond Spice Lucuma
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup coconut oil, melted
  • 1/4 cup plant-based milk
  • 2 tbsp lemon juice + zest

For the Chocolate Protein Frosting Layer:

  • 2 Servings of Nourish Chocolate Bliss
  • 2 Tbsp. lemon juice + zest
  • 1/4 cup melted unsweetened dark chocolate chips
  • 2 tbsp. vegan yogurt (add more if needed for consistency)

For the Toppings:

  • Unsweetened coconut flakes
  • Giant chocolate chips

Instructions

Step 1: Make the Cookie Base

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine Nourish Almond Spice Lucuma with almond milk and lemon juice and zest
  3. Add remaining dry ingredients.
  4. Scoop the dough onto the prepared baking sheet.

Step 2: Bake the Cookies

  1. Bake for 10-12 minutes, or until the edges are golden brown.
  2. Remove from the oven and let the cookies cool completely on the baking sheet.

Step 3: Prepare the Protein Frosting Layer

  1. In a small bowl, mix together the Nourish Chocolate Bliss, melted chocolate, lemon juice, and yogurt. Adjust the yogurt to get a thick but spreadable consistency.
  2. Once the cookies have cooled, spread a layer of the frosting on top of each cookie.
  3. Add another cookie on top

Optional Step 4: Add the Chocolate Drizzle

  1. Melt  dark chocolate chips and coconut oil together in a microwave-safe bowl or over a double boiler. Stir until smooth.
  2. Drizzle the melted chocolate over the protein layer.

 Step 5: Beautify with Toppings

  1. Top with a giant dark chocolate chip in the center of each cookie
  2. Sprinkle coconut flakes!
