Rooted in European traditions, this holiday honors St. Nicholas of Myra, a 4th-century saint known for his kindness, generosity, and the miracles he performed. In Germany (where my husband grew up), children place their shoes by the door on the night of December 5th, hoping to wake up to treats like nuts, oranges, or chocolates.
This year, we’re giving the tradition a nourishing twist with gluten-free, vegan, no-sugar-added cookies that pack 6g of protein each—and they’re ready in just 90 seconds!
Recipe: St. Nick's Microwaveable Protein Cookies
Makes 9 cookies
For the Cookie Dough:
- 1 serving Nourish Chocolate Chip Mix (22g protein)
- ⅔ cup Kite Hill Greek Yogurt (17g protein)
For the Peanut Butter Frosting + Topping:
- 1 tbsp peanut butter (4g protein)
- ⅓ cup Kite Hill Greek yogurt (9g protein)
- Dash of monk fruit and cinnamon
- 9 chocolate chips
Instructions:
- In a bowl, mix the Nourish Chocolate Chip Mix with vegan Greek yogurt to form the cookie dough.
- In a separate bowl, melt peanut butter, then mix it with Greek yogurt, a dash of cinnamon, and a touch of monk fruit sweetener.
- Scoop heaping tablespoons of dough onto a plate.
- Microwave for 1 minute and 30 seconds.
- Spread the frosting on the warm cookies, and top each one with a single chocolate chip for a festive touch!
