Want a healthy dessert? Need to get in some quick protein? Only have a few minutes? Then this quick and easy recipe has your back!
We also included a recipe for yogurt frosting, but that is completely optional, the cake still tastes delicious on its own :)
Ingredients for the cake
- One serving of your favorite protein pudding mix (we used Lucuma Almond spice)
- 1 tbsp of your favorite keto flour (we used almond)
- 1/2 cup mylk
- 2 tsp of yacon syrup (or your preferred syrup, we use yacon because it is all natural, naturally contains fiber and prebiotics, and does not spike your blood sugar)
- A pinch of baking powder
Optional Flavor Variations and Add ins
- Snickerdoodle: Add a pinch of Cinnamon, nutmeg, clove, and all spice (go easy on the cinnamon, the chia mix already has some!)
- Nut butter: Mix 1 tablespoon to the batter (make sure it is room temperature or it won't mix in) and drizzle some on top after!
- Blondie's: Add in 1 tbsp of mini unsweetened chocolate chips
- Almond butter: add 1 tablespoon to the batter (make sure to whisk it until combined) or drizzle some on top after for flavor and healthy fats.
- Blueberries: Add 2 tablespoons of blueberries to the batter before microwaving.
- Apple pie: Replace the milk with apple sauce and add 2 tablespoons of cut-up apple pieces to the batter before baking in the microwave.
- Carrot cake: Add 3 tbsp of shredded carrots to the batter and add a little more cinnamon.
- Pumpkin pie: add 1/2 tsp of pumpkin pie spice and 2 tbsp of canned pumpkin. Make sure to mix well.
Optional Yogurt Frosting
Mix a 1/4 cup of your yogurt of choice (we like plain unsweetened coconut yogurt), a pinch of monk fruit, and your favorite spices (we love cinnamon and ginger).
Instructions
1. In a microwave-safe bowl or mug, mix the flour, dry protein pudding mix, yacon syrup, and baking powder.
2. Add in the milk. Mix until a smooth batter is formed.
3. Stir in any additional toppings (we gave suggestions above, but feel free to experiment with your own!)
4. Microwave on high for 60 – 75 seconds. Note that every microwave is different so it may be a good idea to check on your cake at the 45 second mark. If it looks underdone, you can cook in 15 second intervals until its done!
5. Optional: Top with the yogurt frosting and whatever toppings of your choice! Note that if the cake is still hot, the yogurt might melt a little.
